Is a grayscale PDF the same as a one-bit black-and-white version?

No. The results have many shades of gray, not just absolute black and white. The image and background still retain light and dark details. Low-resolution fax-type copies have different quality and contrast, so they need to be checked separately.

Why do the two lines in the chart look the same after conversion?

Two different colors can produce similar brightness when converted to gray, so grid lines or cars lose distinguishing features. Please review the page with color annotations. If the information depends on color, keep the color version or add text labels before converting.
